The wife and I had their 7 course meal there tonight with the wine pairing for her. First off this is a place in a really nice Neighborhood. The building is a beautifully restored and appointed atomic era custom home. Michael greeted us immediately after we rang the doorbell. Michael was very friendly, extremely polite, and respectful. He offered us drinks, Sarah selected a special German gin with a tonic water and I had a house specialty mock tail. The drinks were expertly mixed to delicious perfection. I think he’s a sommelier as each wine pairing came with a full description of origin and qualities of the wine. Then there’s chef Alex. Throughout the meal as Michael presented each course along with expertly selected clean flatware the faire knocked our socks off at each turn. Chef Alex only sources organic everything, makes all of the bases and dressings from scratch. Everything that hits the table save the beverages, is made in house from scratch. Make no mistake about it this woman knows fine dining. She definitely has formal training of some sort with dishes that need an introduction. Elevated custom chef food with a twist of gastronomy added in just the right amount. Because the food is locally sourced from the best organic producers all of the menus are custom created with what’s in season and fresh. The whole experience felt super exclusive as if you were having dinner in your friends atomic era mansion decorated in a hip European style. They can sit parties of up to twelve at a time and maybe more with proper notice.

Had the very excellent 16 course tasting menu. Everything was delicious and locally sourced. The wine suggestions were also excellent. It did take 6.5 hours, so maybe that was a bit longer than absolutely necessary, but the ambiance and the very soft cat did make up for it. Also, I want a koi pond entrance to my house.

I booked a night thinking I was just finding a place to sleep, breaking up a long drive. Instead I sat down to an unbelievable fine dining experience, with music and atmosphere that takes you elsewhere for a little while. My stay in Ernest the Airstream came towards the end of a very long road trip. After days of monotonous eat, sleep, drive, I found a place where I could enjoy myself. It almost felt weird! Michael asked if I wanted dinner, I thought, well I have some bread and peanut butter in the car, I’ll be fine. Thank god he convinced me! I then ordered breakfast on the spot, mid-meal. The breakfast was unreal, amazing with things I had never even heard of before. Alex and Michael are very thoughtful and attentive hosts, people you can connect with and that care. Many thanks for the delicious food and hospitality, I can’t even begin to explain how refreshing this experience was. Spend some time here and spoil yourself, it really is special.

I don’t leave many reviews, but this place deserves to be known across the state of New Mexico. The fine dining vegan dishes, the naturally rich ingredients, and the lovely presentation of the 8 course dinner is a complete refresher from your normal day to day eats. Alex, the chef, has the taste and care of a high-end artist. Your tastebuds are in for a rejuvenating massage. They serve healthy and many homemade sauces and platters. Her genuine care for you and your specific diet is what stands out among any other restaurant. Michael, the server and her husband, is polite and has the right cadence to his serving. He’s also passionate about supporting his wife’s cooking which brought a wholesome smile to our faces. He’s also a self-taught architect and artist of his own caliber. He helped shape the ambiance of their beautiful eating area inside their home. We also had their incredible breakfast platter the next morning! Irresistible bread and choices 👌 I recommend taking a detour if you must so you can experience their food and hospitality. This was the most tasty food I’ve had the pleasure of eating in many years.
