  I had heard a lot of good things about the “world famous Mac n’ Cheese” and was so excited to taste it. Sadly, it was pretty regular (in fact, my husband says my recipe is better, ha). The location is easy to find, at the center of Pikes, and the environment was great. I enjoyed trying the cheese curd samples (in the back of the restaurant) and would probably go again just for the cheese.

  Their menu says "world's best mac and cheese" and it didn't disappoint. It was so good I had to have it more than once during our visit. If you are going to eat lunch at Pike place market you have to have this mac and cheese!!! They have a location in the airport that is just as good!

  Cheese. Need I say more? Okay, I will, because this place was awesome. Didn't know what to expect, I'm a New York sharp cheddar snob, but I live many good cheeses. This place did not disappoint. They have the squeakiest cheese curds I've had (squeaky cheese), and their aged flagship cheese was addictive. I'm lucky I didn't get or if there with 10 pounds of cheese to take home! They have a large mixing vat in the front window so you can see some of the cheese making process, and in addition to all of the cheeses they are selling (you can try ANY of them if you ask!), they have homemade Mac and cheese, grilled cheese, etc. Like cheese? Try the Flagship. Want something with a little more oomph? Get the 4 year Flagship. Something that reminds you of sitting around a fire with friends? If your friends were made of cheese? Smoked Flagship. There are other handmade cheeses as well... Gouda, mozzarella, Swiss, some kind of specialty cheese that's wrapped in stinging nettle leaves (seriously!). From mild to adventurous, there's a cheese for that, and you can try them all at Beecher's.

  If you get the chance to go here DO IT! The mac n cheese is delicious as is their cheese. They have the freshest cheese curds I've found. Def a special treat. Every time we drive to Seattle (3 hours away) we have to stop here. Do yourself a favor and try it. Thank me later. 😀
